According to Wikipedia the word “avocado” comes from the Spanish aguacate. The modern English name is not etymologically related to the similar-sounding Spanish word abogado, meaning ‘lawyer’ (as in advocate), but comes through an English rendering of the Spanish aguacate as avogato. Avocados are a superfood !! Is a great source of lutein, a carotenoid that works as an antioxidant and helps protect against eye disease. Avocados can help you lose weight and can help stabilize blood sugar and lower high cholesterol. Pasta with Avocado Souce:

Ingredients

  • 12 New Mexico hatch chile peppers, roasted and peeled
  • 10 tomatillos (~1 lb), roasted or grilled
  • 1-2 heads of garlic, roasted or grilled
  • 2-3 green onions
  • 2 ripe avocados
  • ½ cup of olive oil
  • 1 small bunch of cilantro
  • Juice of 2 limes
  • Salt to taste
  • For the avocado pastas:
  • 2 lbs of spaghetti or your choice of pastas, cooked according to package instructions or your preference
  • Crumbled queso fresco or cotija cheese
  • Chopped green onions
  • Additional diced or sliced avocado, optional
  • Cilantro leaves

Instructions
1. Combine all the ingredients for the spicy avocado sauce in the blender. 2. Blend until you have a smooth sauce. 3. The sauce can be served immediately or refrigerated until needed. Stir and let it return to room temperature when serving. 4. Cook the spaghetti or pastas according to package instructions, drain, and place in a large bowl. 5. Add the spicy avocado sauce and mix well. Serve the avocado pastas with crumbled queso fresco, chopped green onions, cilantro leaves, and diced avocado. Source: www.llaylita.com 


Avocado Fries:

Ingredients :

  • 2 large ripe avocados
  • 1 cup all-purpose flour
  • 3 large eggs, beaten
  • 2 cups panko breadcrumbs
  • kosher salt for sprinkling
  • oil

Directions. 1. Slice avocadoes in half, twist halves apart and remove pit 2. Cut each half into three wedges and peel off outer skin 3. Dredge each wedge in flour, then soak in egg (leave it in for a few seconds to allow the egg to stick to the flour), roll in breadcrumbs and place on a tray or platter 4. Preheat oven to 180 C 5. Remove after 5 minutes, or when they’re golden-brown and crisp-looking 6. Drain on several layers of paper towels, sprinkle with salt and serve with your favorite dipping sauce.
